Creamy Balsamic Mushroom Chicken Pasta

8 oz (225 g) fettuccine or penne pasta

1 lb (450 g) boneless, skinless chicken breasts, cut into strips

2 tbsp olive oil

8 oz (225 g) cremini or button mushrooms, sliced

3 cloves garlic, minced

1 cup (240 ml) heavy cream

1/2 cup (120 ml) balsamic vinegar

1/2 cup (50 g) grated Parmesan cheese

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken strips, seasoning with salt and pepper. Cook for about 5-7 minutes, or until the chicken is golden and cooked through. Remove the chicken from the pan and set it aside.

      Sauté Mushrooms and Garlic: In the same skillet, add the sliced mushrooms. Sauté for about 4-5 minutes, until they are browned and softened. Add the minced garlic and cook for another minute until fragrant.

        Make the Sauce: Pour the balsamic vinegar into the skillet, scraping up any brown bits from the bottom. Let it simmer for about 2 minutes until it reduces slightly. Then, stir in the heavy cream, thyme, oregano, and Parmesan cheese. Bring the mixture to a simmer and let it thicken for about 3-4 minutes. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

          Combine Everything: Return the cooked chicken to the skillet and toss to coat it with the creamy sauce. Add the drained pasta and gently mix until everything is well combined. Taste and adjust seasoning with additional salt and pepper, if necessary.
