Creamy Basil Pesto Gnocchi

1 lb potato gnocchi

1 cup fresh basil leaves, tightly packed

1/3 cup pine nuts (toasted)

1/2 cup grated Parmesan cheese

1 clove garlic, minced

1/2 cup heavy cream

1/4 cup extra virgin olive oil

Salt and pepper to taste

Optional: cherry tomatoes, halved for garnish

Optional: additional Parmesan for serving

Cook the Gnocchi: In a large pot of boiling salted water, add the gnocchi. Cook according to package instructions, usually until they float to the surface (about 2-3 minutes). Drain and set aside.

    Make the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, minced garlic, and Parmesan cheese. Pulse until the mixture is coarsely chopped. While the processor is running, slowly add the olive oil until the pesto is smooth. Season with salt and pepper to taste.

      Prepare the Creamy Sauce: In a large skillet over medium heat, add the heavy cream. Bring it to a gentle simmer and let it reduce slightly (about 2-3 minutes).

        Combine: Add the basil pesto to the skillet with the cream, stirring to combine. If the sauce appears too thick, you can thin it out with a splash of reserved gnocchi cooking water.

          Add Gnocchi: Gently stir the cooked gnocchi into the creamy basil pesto mixture, making sure each piece is coated evenly. Cook for another minute or two to heat everything through.
