8 oz (225g) pasta (penne or fusilli work great)

2 cups fresh broccoli florets

2 cups shredded sharp cheddar cheese

1 cup heavy cream

1 cup vegetable broth

1 tablespoon olive oil

3 cloves garlic, minced

1/2 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley or chives for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente (usually around 8-10 minutes). In the last 3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli and set aside.

    Prepare the Sauce: In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Mix in Liquids: Pour in the vegetable broth and heavy cream, stirring well to combine. Bring the mixture to a gentle simmer.
