Ingredients

12 oz fettuccine pasta

2 large chicken breasts (sliced into thin strips)

1 tablespoon olive oil

1 tablespoon Cajun seasoning (adjust to taste)

Salt and pepper to taste

3 cloves garlic (minced)

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons unsalted butter

1/2 cup diced bell peppers (red and green)

1/2 cup diced onion

1/4 cup chopped fresh parsley (for garnish)

Instructions

Cook the Fettuccine: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Season and Cook the Chicken: In a large skillet over medium heat, add the olive oil. Season the sliced chicken breasts with Cajun seasoning, salt, and pepper. Add them to the skillet and cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the butter. Once melted, add the diced onions and bell peppers. Sauté for about 3-4 minutes until soft, then add the minced garlic and cook for an additional minute.

Create the Sauce: Pour in the chicken broth and bring to a simmer. Add the heavy cream and stir to combine. Gradually whisk in the grated Parmesan cheese until smooth. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

Combine: Return the cooked chicken to the skillet and add the cooked fettuccine. Toss everything together gently to combine, ensuring the pasta is well coated in the creamy sauce. Taste and adjust seasoning if necessary.

Serve: Garnish with chopped fresh parsley and an extra sprinkle of Parmesan if desired. Serve warm and enjoy your delicious Cajun Chicken Alfredo!
