1 medium head of cauliflower, chopped into florets

2 cups vegetable broth (low-sodium)

1/2 cup unsweetened almond milk (or other non-dairy milk)

3 tablespoons nutritional yeast

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon onion powder

1/2 teaspoon ground nutmeg (optional)

Salt and pepper, to taste

1 pound fettuccine pasta (can be gluten-free)

Fresh basil or parsley for garnish (optional)

Grated vegan parmesan cheese for serving (optional)

Instructions
 

Cook the Cauliflower: In a medium-sized pot, bring the vegetable broth to a boil. Add the cauliflower florets and cook for about 8-10 minutes, or until they are tender. Drain and set aside, reserving a little of the broth.

    Sauté Garlic: In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 2 minutes, until fragrant but not browned.

      Blend the Sauce: In a high-speed blender, combine the cooked cauliflower, sautéed garlic, almond milk, nutritional yeast, onion powder, nutmeg (if using), salt, and pepper. Blend until the mixture is completely smooth and creamy. If it’s too thick, add a splash of the reserved vegetable broth until you reach your desired consistency.

        Cook the Pasta: While preparing the sauce, cook the fettuccine pasta according to package instructions in a large pot of salted boiling water. Once cooked, drain and return to the pot.

          Combine Pasta and Sauce: Pour the creamy cauliflower sauce over the cooked pasta, tossing gently to combine until all pastas are evenly coated.
