12 oz (340 g) pasta of your choice (fettuccine or penne work well)

1 cup fresh or frozen corn kernels

1 tablespoon olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup vegetable or chicken broth

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup fresh basil, chopped (for garnish)

Zest of 1 lemon (optional)

Crushed red pepper flakes (optional, for heat)

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until they become translucent. Add the minced garlic and corn kernels, cooking for an additional 2-3 minutes until the corn is tender.

      Make the Sauce: Pour in the vegetable or chicken broth, followed by the heavy cream. Stir in the Italian seasoning, and season with salt and pepper. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the sauce to thicken slightly.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat the pasta in the creamy sauce. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
