1 lb (450g) boneless, skinless chicken breasts

4 cups (960ml) chicken broth

1 cup (240ml) heavy cream

1 cup (150g) shredded carrots

1 cup (150g) frozen peas

1 medium yellow onion, diced

2 cloves garlic, minced

1 tablespoon chicken bouillon granules

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1 cup (90g) egg noodles

4 oz (113g) cream cheese, softened

1/2 cup (60g) chopped green onions for garnish

Fresh parsley for garnish (optional)

Instructions
 

Cook the Chicken: In a large pot, add the chicken breasts and cover them with 4 cups of chicken broth. Bring to a boil, then reduce the heat, cover, and let simmer for about 20 minutes, or until the chicken is cooked through. Remove the chicken and shred it using two forks. Set aside.

    Sauté the Vegetables: In the same pot, add diced onions and minced garlic. Sauté over medium heat until the onions are translucent, about 3-4 minutes.

      Combine Ingredients: Stir in the shredded carrots, chicken bouillon granules, salt, black pepper, garlic powder, onion powder, and Italian seasoning. Cook for another 2 minutes to incorporate the flavors.

        Add Cream and Noodles: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the frozen peas and egg noodles.

          Cook the Noodles: Let the soup simmer for about 7-10 minutes, or until the noodles are tender.

            Return Chicken and Cream Cheese: Add the shredded chicken back into the pot along with the softened cream cheese. Stir gently until the cream cheese is fully melted and incorporated into the soup, creating a creamy texture.
