Ingredients

2 large cucumbers, thinly sliced

1 cup plain Greek yogurt (or sour cream)

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar (or white wine vinegar)

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon lemon juice

Optional: 1 tablespoon fresh chives, chopped

Optional: Cherry tomatoes, halved for garnish

Instructions

Prepare the Cucumbers: Place the thinly sliced cucumbers in a colander. Sprinkle them lightly with salt and let them sit for about 15 minutes. This will help draw out excess moisture and keep your salad crisp.

Make the Dressing: In a large mixing bowl, combine the plain Greek yogurt, mayonnaise, apple cider vinegar, fresh dill, garlic powder, onion powder, salt, pepper, and lemon juice. Whisk together until smooth and well-blended.

Drain the Cucumbers: After 15 minutes, rinse the cucumbers under cold water to remove excess salt. Pat them dry with paper towels to remove any remaining moisture.

Combine Ingredients: Add the drained cucumbers to the bowl with the dressing. If you are using chives, toss them in now.

Chill and Serve: Gently fold the cucumbers into the creamy dressing until well coated. Cover the mixing bowl with plastic wrap and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

Garnish: Just before serving, add halved cherry tomatoes on top for a pop of color and freshness, if desired. Serve chilled as a refreshing side dish.
