4 bone-in, skin-on chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, diced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 teaspoon dried parsley

Fresh parsley, chopped (for garnish)

Season the Chicken: Pat the chicken thighs dry with paper towels. Season generously with salt and pepper on both sides.

    Sear the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes, until the skin is crispy and golden brown. Flip the thighs and sear for another 5 minutes. Remove chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

        Deglaze the Pan: Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

          Make the Cream Sauce: Reduce the heat to low and stir in the heavy cream, Dijon mustard, thyme, rosemary, and parsley. Mix well and let the sauce simmer for another 2-3 minutes, allowing the flavors to meld.

            Combine Chicken and Sauce: Return the seared chicken thighs to the skillet, skin-side up. Spoon some of the sauce over the thighs. Cover the skillet and simmer on low heat for about 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
