1 large head of cauliflower, cut into florets

4 cloves of garlic, peeled and minced

¼ cup unsalted butter (or vegan alternative)

½ cup heavy cream (or coconut milk for a dairy-free version)

1 teaspoon salt (to taste)

½ teaspoon black pepper

¼ cup grated Parmesan cheese (optional, or nutritional yeast for a vegan option)

2 tablespoons fresh chives, chopped (for garnish)

Instructions
 

Boil Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and minced garlic cloves. Boil for about 10-12 minutes, or until the cauliflower is fork-tender.

    Drain and Steam Dry: Using a colander, drain the cauliflower and garlic, then return them to the pot. Allow the residual heat to evaporate any excess moisture for about 2-3 minutes.

      Blend Ingredients: Add the butter, cream, salt, pepper, and Parmesan cheese (if using) to the pot with the cauliflower and garlic. Using an immersion blender or a regular blender, blend until smooth and creamy. Scrape down the sides as needed to ensure everything is well combined.

        Taste and Adjust: Taste the mixture and adjust the seasoning with more salt or pepper if desired. Blend again briefly to mix.

          Serve: Transfer the creamy garlic mashed cauliflower to a serving bowl. Top with freshly chopped chives for garnish.
