Ingredients

1 pound potato gnocchi (store-bought or homemade)

2 tablespoons olive oil

3 cloves garlic, minced

5 ounces fresh spinach, washed and chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt

¼ teaspoon black pepper

¼ teaspoon nutmeg (optional)

Fresh basil or parsley, for garnish

Instructions

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions. Once they float to the surface, they are done. Drain and set aside.

Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

Add Spinach: Gradually add the chopped spinach into the skillet, stirring until wilted and mostly reduced in volume, about 2-3 minutes.

Make it Creamy: Pour in the heavy cream, stirring well to combine. Bring the mixture to a gentle simmer.

Incorporate Cheese: Stir in the grated Parmesan cheese, salt, black pepper, and nutmeg (if using). Continue to stir until the cheese is melted and the sauce is smooth and creamy.

Combine Gnocchi and Sauce: Gently fold in the cooked gnocchi, ensuring each piece is well coated in the creamy garlic sauce. Allow to heat through for another minute.

Garnish and Serve: Remove from heat and garnish with fresh basil or parsley. Serve immediately and enjoy!
