Ingredients

2 cups canned white beans (like cannellini or great northern), drained and rinsed

3 cloves garlic, minced

1/4 cup tahini

1/4 cup fresh lemon juice

1/4 cup extra-virgin olive oil

2 tablespoons water (adjust for desired consistency)

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for a bit of heat)

Instructions

Prepare the Ingredients: Begin by draining and rinsing the white beans under cold water. Mince the garlic finely so it can infuse nicely into the dip.

Blend the Base: In a food processor, combine the white beans, minced garlic, tahini, lemon juice, olive oil, ground cumin, smoked paprika, and a pinch of salt and pepper.

Process: Pulse the mixture until it begins to come together. Scrape down the sides of the bowl with a spatula as needed.

Adjusting Consistency: Gradually add water, one tablespoon at a time, while continuing to process until the mixture reaches your desired creaminess. It should be smooth and velvety.

Taste and Adjust: Taste the dip and adjust the seasoning with more salt, pepper, or lemon juice as needed. If you like a bit of heat, sprinkle in some red pepper flakes.

Serving: Transfer the creamy garlic white bean dip to a serving bowl. Drizzle a little extra-virgin olive oil on top and garnish with chopped parsley.

Enjoy: Serve the dip with a selection of your favorite dippers such as fresh veggies, pita chips, or toasted bread.
