Creamy Greek Yogurt Popsicles

Ingredients
  

2 cups plain Greek yogurt

1/2 cup honey (or maple syrup for a vegan option)

1 cup fresh mixed berries (such as strawberries, blueberries, and raspberries)

1 teaspoon pure vanilla extract

Juice of 1 lemon

Pinch of salt

Optional: Mint leaves for garnish

Prep the Berries: If using whole berries, wash and dry them thoroughly. For larger berries like strawberries, slice them into smaller pieces. Set aside.

    Mix the Base: In a large mixing bowl, combine the plain Greek yogurt, honey, vanilla extract, lemon juice, and salt. Stir until the mixture is smooth and creamy.

      Incorporate the Berries: Gently fold in the mixed berries, ensuring they are evenly distributed throughout the yogurt mixture without breaking them apart too much.

        Fill the Molds: Pour the yogurt and berry mixture into popsicle molds, leaving a little space at the top to allow for expansion during freezing.

          Insert Sticks: If your popsicle molds require sticks, carefully insert them into the center of each mold.

            Freeze: Place the filled molds in the freezer for at least 6 hours, or until they are completely frozen.

              Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and serve immediately, garnished with fresh mint leaves if desired.
