Creamy Lemon Artichoke Chicken Bake

4 boneless, skinless chicken breasts

1 can (14 oz) artichoke hearts, drained and roughly chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon lemon zest

2 tablespoons lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt, black pepper, and oregano, then sear them in the skillet for about 3-4 minutes on each side until lightly browned (they don’t need to be fully cooked). Remove the chicken and set aside.

      Make the Creamy Mixture: In a mixing bowl, combine the softened cream cheese, sour cream, lemon juice, lemon zest, garlic, thyme, and half of the mozzarella cheese. Mix well until smooth and creamy. Add the chopped artichokes and gently fold them into the mixture.

        Assemble the Bake: In a greased 9x13 inch baking dish, place the seared chicken breasts in a single layer. Spread the creamy artichoke mixture evenly over the top of the chicken. Sprinkle the remaining mozzarella cheese and grated Parmesan cheese on top.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the top is golden and bubbly.
