2 cups freshly squeezed lemon juice (about 8-10 lemons)

1 cup sweetened condensed milk

1 cup coconut milk (or whole milk for a creamier texture)

1/2 cup granulated sugar (adjust based on the sweetness preference)

Zest of 2 lemons

1 tsp vanilla extract

Pinch of salt

Fresh mint leaves (for garnish)

Lemon slices (for decoration)

Prepare the Lemonade Base: In a large mixing bowl, combine the freshly squeezed lemon juice and granulated sugar. Whisk until the sugar is completely dissolved.

    Mix the Cream Ingredients: In a separate bowl, whisk together the sweetened condensed milk, coconut milk, lemon zest, vanilla extract, and a pinch of salt until smooth and well-blended.

      Combine Mixtures: Gradually fold the lemonade mixture into the creamy mixture. Stir gently until fully combined, ensuring that the lemon juice is evenly distributed throughout.

        Taste Test: Give a quick taste to adjust sweetness if necessary. If you'd like it sweeter, add a bit more sugar and mix well.

          Pour into Molds: Carefully pour the mixture into popsicle molds, filling each mold about 3/4 full to allow for expansion when freezing.

            Insert Sticks: If your molds have a built-in stick holder, insert them now. If not, allow the popsicles to freeze for about an hour until slightly solid, then insert wooden sticks.

              Freeze Until Solid: Place the molds in the freezer and let them freeze for at least 6-8 hours, or until completely solid.

                Unmold the Pops: To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the pops from the molds.

                  Garnish and Serve: For an extra touch, place a fresh mint leaf and a thin lemon slice on top of each popsicle before serving. Enjoy a refreshing, creamy summer treat!
