1 cup freshly squeezed lemon juice (about 4-5 lemons)

2 cups coconut milk (or heavy cream for a richer taste)

1 cup granulated sugar (adjust based on desired sweetness)

1 teaspoon vanilla extract

Zest of 2 lemons

Pinch of salt

Optional: fresh mint leaves for garnishing

Instructions
 

Prepare Lemons: Start by juicing the lemons until you achieve 1 cup of fresh lemon juice. Set aside.

    Mix Ingredients: In a medium mixing bowl, combine the coconut milk (or heavy cream), sugar, and vanilla extract. Whisk together until the sugar is fully dissolved.

      Add Flavor: Stir in the freshly squeezed lemon juice, lemon zest, and a pinch of salt. Mix until well incorporated.

        Blend (Optional): For an extra creamy texture, you can blend the mixture using a blender until smooth.

          Pour into Molds: Carefully pour the mixture into popsicle molds, leaving a little space at the top for expansion when freezing.

            Insert Sticks: If your molds require them, insert the popsicle sticks into the center of each mold.

              Freeze: Place the molds in the freezer and leave them to freeze for at least 6 hours or until completely solid.

                Unmold & Serve: To release the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and serve immediately. Garnish with fresh mint leaves if desired.
