1 cup coconut milk (or almond milk)

1/2 cup ripe mango, diced (plus extra for topping)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Blend: In a blender, combine the coconut milk, diced mango, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy.

    Mix: In a mixing bowl, combine the blended mango mixture with the chia seeds. Stir well until the chia seeds are evenly distributed.

      Set: Cover the bowl with plastic wrap or transfer the mixture into individual jars. Refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and create a pudding-like consistency.

        Serve: Once the pudding is set, give it a good stir. If it's too thick, you can mix in a little more coconut milk to reach your desired consistency.
