2 tablespoons unsalted butter

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

16 ounces (450g) mixed mushrooms (such as cremini, shiitake, and button), sliced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: A squeeze of lemon juice for brightness
