8 oz egg noodles or your choice of pasta

2 tbsp olive oil

1 medium onion, finely diced

3 cloves garlic, minced

16 oz cremini or button mushrooms, sliced

1 tsp dried thyme

1 tsp smoked paprika

1 cup vegetable broth

1 cup sour cream or Greek yogurt

2 tbsp soy sauce (or tamari for gluten-free)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the Mushrooms: Increase the heat to medium-high and add the sliced mushrooms to the pan. Sauté for 8-10 minutes, stirring occasionally until the mushrooms are browned and their liquid has evaporated.

        Season the Mixture: Stir in the dried thyme, smoked paprika, salt, and pepper. Cook for another minute to toast the spices.
