1 lb (450g) store-bought gnocchi

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

2 cloves garlic, minced

1 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually around 2-4 minutes, or until they float to the surface. Drain and set aside.

      Prepare the creamy pesto sauce: In a medium saucepan, heat olive oil over medium heat. Sauté minced garlic for about 30 seconds until fragrant, being careful not to brown it. Add the heavy cream to the saucepan and slowly stir in the basil pesto. Allow it to simmer for about 3-4 minutes, stirring occasionally, until warmed through and slightly thickened. Season with salt and pepper to taste.

        Combine the ingredients: In a large mixing bowl, combine the cooked gnocchi, chopped spinach, halved cherry tomatoes, and half of the mozzarella cheese. Pour the creamy pesto sauce over the mixture and toss gently until everything is well combined.
