2 large red bell peppers

1 cup cream cheese, softened

1/2 cup sour cream

1/4 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and black pepper to taste

Fresh parsley or basil for garnish (optional)

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet and roast in the oven for about 25-30 minutes, turning occasionally, until the skins are charred and blistered.

    Cool and Peel: Once roasted, remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap or a clean kitchen towel for about 10-15 minutes. This will steam the peppers and make it easier to peel off the skins. After cooling, peel off the charred skin, and remove the stems and seeds. Chop the roasted peppers coarsely.

      Blend the Ingredients: In a food processor, combine the roasted red peppers, softened cream cheese, sour cream, mayonnaise, minced garlic, lemon juice, smoked paprika, garlic powder, salt, and black pepper. Blend until smooth and creamy, scraping down the sides as needed.

        Taste and Adjust: Taste the dip and adjust seasoning if needed. If you prefer a spicier kick, you can add a pinch of cayenne pepper or hot sauce.

          Chill: Transfer the dip to a serving bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld together.
