12 oz (340 g) pasta (farfalle or penne work great)

1 tbsp olive oil

3 cloves garlic, minced

1 small onion, diced

8 oz (225 g) fresh spinach, chopped (or 1 cup frozen spinach, thawed)

1 can (14 oz / 400 g) artichoke hearts, drained and chopped

1 cup (240 ml) heavy cream

1 cup (240 g) cream cheese, softened

1 cup (100 g) shredded mozzarella cheese, plus more for topping

½ cup (50 g) grated Parmesan cheese

1 tsp dried basil

1 tsp dried oregano

½ tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Cook the pasta: In a large pot, bring salted water to a boil. Add the pasta and cook until al dente according to package directions. Drain and set aside.

      Sauté the aromatics: In a large skillet over medium heat, heat the olive oil. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add spinach and artichokes: Gradually add the chopped spinach to the skillet until wilted (if using fresh). Stir in the chopped artichoke hearts, cooking for about 2 minutes to heat through.

          Make the creamy sauce: Lower the heat and add the heavy cream and softened cream cheese to the skillet. Stir continuously until the cream cheese is fully melted and integrated, creating a creamy sauce.

            Combine ingredients: Add the cooked pasta to the skillet, along with mozzarella, Parmesan, dried basil, dried oregano, red pepper flakes (if using), salt, and pepper. Stir until everything is well combined and coated in the sauce.

              Transfer to baking dish: Pour the creamy pasta mixture into a greased 9x13 inch (23x33 cm) baking dish. Spread it evenly.

                Top and bake: Sprinkle additional shredded mozzarella on top for a cheesy crust. Bake in the preheated oven for 25-30 minutes or until bubbly and golden on top.

                  Serve: Remove from the oven and let it sit for 5 minutes. Garnish with fresh parsley before serving.
