Creamy Spinach and Eggs

4 large eggs

2 cups fresh spinach, chopped

1/2 cup heavy cream

1/4 cup cream cheese, softened

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1/4 teaspoon nutmeg

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook Spinach: Stir in the chopped spinach and cook until it wilts down, about 2-3 minutes.

      Prepare Cream Mixture: In a bowl, whisk together the heavy cream, cream cheese, nutmeg, salt, and pepper until smooth and well combined.

        Combine Ingredients: Pour the cream mixture into the skillet with the spinach and onions. Stir well and let it simmer for about 3-4 minutes until slightly thickened.

          Scramble Eggs: In a separate bowl, beat the eggs until well combined. Push the spinach mixture to one side of the skillet and pour the beaten eggs into the empty side. Allow them to cook for a minute, then gently stir to scramble the eggs, mixing in the spinach mixture as they cook.

            Add Cheese: Once the eggs are cooked to your desired doneness (around 3-5 minutes), sprinkle the grated Parmesan cheese over the top and stir to combine.

              Garnish & Serve: Remove the skillet from the heat and garnish with freshly chopped parsley. Serve immediately with crusty bread on the side for a delightful brunch experience.
