2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

4 cups fresh spinach (or 1 cup frozen, thawed)

1 cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper (adjust to taste)

¼ teaspoon red pepper flakes (optional for heat)

Fresh basil or parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water for later use.

    Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Mushrooms: Add the sliced mushrooms to the skillet, cooking for about 5-6 minutes, or until they are browned and have released their liquid. Stir occasionally for even cooking.

        Incorporate Spinach: If using fresh spinach, add it to the skillet and cook until wilted, about 2-3 minutes. If using frozen spinach, ensure it's heated through and evenly distributed.

          Make the Cream Sauce: Lower the heat and pour in the heavy cream. Stir well to combine with the sautéed vegetables. Add the grated Parmesan cheese, salt, black pepper, and red pepper flakes (if using). Allow the mixture to simmer for about 2-3 minutes until slightly thickened.
