Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 cup heavy cream

1 teaspoon dried Italian seasoning

1 cup fresh basil leaves, chopped (plus more for garnish)

½ cup grated Parmesan cheese

½ teaspoon red pepper flakes (optional, for heat)

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 6-7 minutes per side or until they are golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside.

Sauté Garlic: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

Add Tomatoes: Pour in the diced tomatoes (with juices) and stir to combine. Cook for about 3-4 minutes, allowing the sauce to simmer and thicken slightly.

Make it Creamy: Reduce the heat to low. Stir in the heavy cream, Italian seasoning, and red pepper flakes (if using). Let it simmer for another 2-3 minutes until the sauce is creamy and well combined.

Mix in Cheese and Basil: Add the grated Parmesan cheese and chopped basil to the skillet. Stir until the cheese melts and the sauce is smooth.

Return Chicken to Skillet: Place the seared chicken breasts back into the skillet, spooning the sauce over the top. Let them simmer for an additional 5 minutes to absorb the flavors.

Serve: Garnish with additional fresh basil and serve the chicken with the creamy tomato sauce over rice, pasta, or a fresh green salad.
