8 oz linguine pasta

1 lb large shrimp, peeled and deveined

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Shrimp: While the pasta is cooking, season the shrimp with salt and black pepper. In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once the oil is hot, add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until they soften slightly. Stir in the baby spinach and cook until wilted.

        Make the Cream Sauce: Reduce the heat to medium-low and pour in the heavy cream. Stir until heated through, and then add the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Mix well until the cheese is melted and the sauce is smooth. If the sauce is too thick, add some of the reserved pasta water to reach your desired consistency.

          Combine: Add the cooked linguine and shrimp back into the skillet. Toss everything together until well coated with the creamy sauce. Adjust seasoning with more salt and pepper if needed.
