Creamy Tuscan Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil, for garnish

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp to the skillet. Season with salt and pepper, and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes, until they are slightly softened.

        Add Spinach: Stir in the fresh spinach and cook until wilted, about 1-2 minutes.

          Make it Creamy: Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and Italian seasoning. Mix until the cheese is melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water until desired consistency is achieved.

            Combine Shrimp and Pasta: Return the cooked shrimp to the skillet. Add the drained fettuccine and toss everything together until well coated with the creamy sauce. Adjust seasoning with salt, pepper, and red pepper flakes, if using.

              Serve: Plate the creamy Tuscan shrimp pasta and garnish with fresh basil and additional Parmesan cheese if desired. Serve warm and enjoy!
