Creamy Zucchini & Sweet Corn Casserole

4 medium zucchinis, grated

2 cups fresh sweet corn (or frozen)

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup chopped onion

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs

2 tablespoons olive oil

Preheat Oven: Start by preheating your oven to 375°F (190°C). Grease a 9x13 inch baking dish with a little oil.

    Sauté Onions and Garlic: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add chopped onions and sauté for about 2-3 minutes until they are translucent. Stir in minced garlic and cook for another minute until fragrant.

      Prepare Zucchini: Place the grated zucchini in a clean kitchen towel or cheese cloth, and twist to squeeze out excess moisture. This prevents the casserole from becoming soggy.

        Combine Ingredients: In a large mixing bowl, combine the sautéed onions and garlic, grated zucchini, sweet corn, sour cream, cream cheese, half of the mozzarella, and half of the Parmesan. Add thyme, paprika, salt, and pepper. Mix thoroughly until well incorporated.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it evenly.

            Prepare Topping: In a small bowl, mix the remaining mozzarella, Parmesan, and breadcrumbs. Sprinkle this mixture evenly over the top of the casserole.

              Bake: Place the dish in the preheated oven. Bake for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.

                Cool and Serve: Remove the casserole from the oven and let it cool for about 10 minutes before serving. This allows the flavors to meld and makes it easier to slice.
