1 medium eggplant

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for heat)

2 tablespoons grated Parmesan cheese (optional for a cheesy flavor)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Prep the Eggplant: Start by washing the eggplant thoroughly. Slice it into thin rounds, about 1/8 inch thick, using a sharp knife. For best results, a mandoline slicer can be used to ensure even thickness.

    Salt the Eggplant: Place the sliced eggplant in a colander and sprinkle salt over it. Allow it to sit for about 30 minutes to draw out excess moisture and bitterness. Rinse the slices under cold water and pat them dry with paper towels.

      Season the Eggplant: In a large mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Toss the dried eggplant slices in the mixture until they are evenly coated.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Arrange the Chips: Place the seasoned eggplant slices in a single layer in the air fryer basket. Avoid overlapping the slices to ensure they crisp up nicely. You may need to do this in batches depending on the size of your air fryer.

            Air Fry the Chips: Cook the eggplant chips in the air fryer for 12-15 minutes, shaking the basket halfway through to ensure even cooking. Keep an eye on them towards the end to ensure they don’t burn.
