Crispy Air Fryer Taco-Stuffed Mini Peppers

10 mini sweet peppers

1 lb ground turkey (or chicken)

1 tablespoon olive oil

1 packet taco seasoning (or homemade blend)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or fresh)

1 cup shredded cheddar cheese

½ cup diced tomatoes (canned or fresh)

¼ cup finely chopped onion

¼ cup chopped fresh cilantro (optional)

Salt and pepper to taste

Sour cream or Greek yogurt, for serving

Prepare the Mini Peppers: Preheat your air fryer to 375°F (190°C). While it’s heating, wash the mini sweet peppers and slice them in half lengthwise. Remove the seeds and set aside.

    Cook the Protein: In a medium skillet over medium heat, add olive oil and diced onions. Sauté until translucent, about 3-4 minutes. Add the ground turkey (or chicken) and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

      Season the Meat: Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for an additional 3-4 minutes until everything is well combined and heated through. Season with salt and pepper to taste.

        Stuff the Peppers: Grab your mini pepper halves and fill each pepper with the taco mixture, packing it gently. Leave a small space at the top for the cheese.

          Air Fry the Stuffed Peppers: Place the stuffed peppers in the air fryer basket, ensuring they are in a single layer (you may need to do this in batches). Air fry at 375°F (190°C) for about 8-10 minutes or until the peppers are tender and begin to crisp.

            Add Cheese: Carefully sprinkle shredded cheddar cheese on top of each stuffed pepper. Return to the air fryer and cook for another 2-3 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Once done, remove the taco-stuffed mini peppers from the air fryer. Garnish with fresh cilantro if desired. Serve hot with a dollop of sour cream or Greek yogurt on top.
