Crispy Baked Pickle Chips

1 jar (32 oz) dill pickles, sliced into 1/4 inch rounds

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil for brushing

Preheat the Oven: Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper or silicone baking mats.

    Prepare the Pickles: Drain the pickle slices from the jar and pat them dry with paper towels. This helps to remove excess moisture, ensuring your chips get crispy.

      Make the Breading Mixture: In a shallow bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well until everything is thoroughly combined.

        Set Up the Breading Station: In another shallow bowl, whisk the eggs until beaten. In a third shallow bowl, place the all-purpose flour.

          Bread the Pickles: Working in batches, dip each pickle slice first in the flour to lightly coat, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, roll the pickle slice in the panko mixture, pressing gently to adhere. Repeat with all the pickle slices.

            Arrange on Baking Sheets: Place the breaded pickle chips in a single layer on the prepared baking sheets. Make sure they are spaced out to allow air to circulate around them for even crisping.

              Spray with Oil: Lightly spray the tops of the pickle chips with cooking spray or brush them with olive oil. This extra step enhances their crispiness.

                Bake: Place the baking sheets in the preheated oven and bake for 15-20 minutes, or until the pickle chips are golden brown and crispy. Flip them halfway through the baking time for even cooking.

                  Cool & Serve: Once done, remove the baking sheets from the oven and let the pickle chips cool slightly before serving. They are best enjoyed warm and crispy!
