Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup buttermilk (or plant-based milk for vegan option)

1 cup buffalo sauce

1 cup breadcrumbs (panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup shredded lettuce

½ cup cherry tomatoes, halved

Fresh cilantro, for garnish

½ cup ranch dressing (store-bought or homemade)

Instructions

Prep the Cauliflower: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper. In a bowl, combine flour, garlic powder, onion powder, smoked paprika, salt, and pepper.

Batter the Cauliflower: Dip each cauliflower floret into the buttermilk, allowing excess to drip off, then coat it in the flour mixture, and finally dip it back into the buttermilk before rolling it in breadcrumbs for a crispy texture. Place the coated florets on the prepared baking sheet.

Bake the Cauliflower: Bake the florets in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.

Buffalo Sauce Coating: Once the cauliflower is baked, remove it from the oven and toss the crispy florets in the buffalo sauce until fully coated.

Warm the Tortillas: While the cauliflower is cooling slightly, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until soft and pliable.

Assemble the Tacos: Start by laying down a few crispy buffalo cauliflower florets in each tortilla. Top with shredded lettuce, avocado slices, cherry tomatoes, and a drizzle of ranch dressing.

Serve & Garnish: Garnish each taco with fresh cilantro for an extra pop of flavor and freshness. Serve immediately with extra buffalo sauce and ranch dressing on the side for dipping.
