Ingredients

2 large sweet potatoes, washed and scrubbed

3 tablespoons olive oil

1 tablespoon Cajun seasoning (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Optional: Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Prepare the Sweet Potatoes: Cut each sweet potato into wedges. Depending on your preference, you can slice them into thin wedges (about 1/4 inch thick) or thicker ones (about 1/2 inch thick).

Make the Seasoning Mixture: In a large mixing bowl, combine the Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until all the spices are evenly blended.

Coat the Wedges: Add the sweet potato wedges to the bowl with the seasoning mixture. Drizzle the olive oil over the wedges. Use your hands or a spatula to toss the wedges until they are well coated with the oil and spices.

Arrange on Baking Sheet: Spread the seasoned sweet potato wedges in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure they cook evenly and get crispy.

Bake to Perfection: Bake in the preheated oven for 25-30 minutes, flipping the wedges halfway through. You want them to be golden brown and crispy on the outside while remaining tender on the inside.

Garnish and Serve: Once they are done, take them out of the oven and let them cool for a couple of minutes. If desired, sprinkle fresh chopped parsley on top for a burst of color. Serve warm.
