Ingredients

1 head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

1 cup unsweetened almond milk (or regular milk)

1 cup panko breadcrumbs

1 tablespoon olive oil

1 cup buffalo sauce (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Celery sticks (for serving)

Blue cheese or ranch dressing (for serving)

Instructions

Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Prepare Cauliflower: Rinse the cauliflower florets under cold water and pat them dry with paper towels.

Create Batter: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt. Gradually whisk in the almond milk until you get a smooth batter.

Coat Cauliflower: Dip each cauliflower floret into the batter, allowing excess to drip off. Place the battered florets onto the lined baking sheet.

Add Crunch: In a separate bowl, mix panko breadcrumbs with olive oil. Sprinkle the breadcrumbs generously over the cauliflower florets for a crunchy coating.

Bake: Bake in the preheated oven for about 20 minutes or until the cauliflower is golden brown and crisp, flipping halfway through for even cooking.

Buffalo Sauce Bath: Once baked, remove the cauliflower from the oven and toss them in a bowl with the buffalo sauce until evenly coated.

Final Bake: Return the coated cauliflower to the baking sheet and bake for an additional 10 minutes, allowing the sauce to caramelize slightly.

Serve: Remove the cauliflower from the oven, garnish with chopped parsley, and serve immediately with celery sticks and your choice of dipping sauce (blue cheese or ranch dressing).
