Crispy Cheesy Zucchini Fritters

Ingredients
  

2 medium zucchinis, grated (about 2 cups)

1 teaspoon salt

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1 cup shredded cheese (mozzarella or a blend of cheeses)

1 large egg, beaten

1/4 cup fresh parsley, chopped (or 1 teaspoon dried parsley)

Olive oil or vegetable oil for frying

Optional: sour cream or yogurt for serving

Instructions
 

Prepare the Zucchini: Begin by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth, and sprinkle with salt. Allow it to sit for about 10-15 minutes to draw out excess moisture. After that, squeeze tightly to remove as much liquid as possible.

    Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, cornmeal, baking powder, garlic powder, onion powder, and black pepper. Mix well to ensure all ingredients are evenly distributed.

      Combine Wet Ingredients: In another bowl, whisk together the grated zucchini (after squeezing out the moisture), beaten egg, chopped parsley, and shredded cheese until well combined.

        Combine Mixtures: Gradually add the zucchini mixture to the dry ingredient mixture. Stir gently until a thick batter forms. If the mixture seems too wet, add a little more flour or cornmeal until you achieve a consistency that holds together well.

          Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat until shimmering.

            Fry the Fritters: Using a tablespoon or a small ice cream scoop, drop spoonfuls of the mixture into the hot oil, pressing down slightly to flatten them. Fry for 2-3 minutes per side or until golden brown and crispy. Do not overcrowd the pan; work in batches if necessary.

              Drain Excess Oil: Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil.
