Crispy Chicken Wraps

2 large chicken breasts (boneless, skinless)

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (optional, for heat)

Salt and pepper, to taste

1 cup panko breadcrumbs

4 large tortilla wraps (whole wheat or regular)

1 cup shredded lettuce

1 cup diced tomatoes

½ cup shredded cheese (cheddar or a blend)

½ cup ranch dressing or your favorite sauce

Cooking oil, for frying

Marinate the Chicken: In a large bowl, soak the chicken breasts in buttermilk for at least 30 minutes, preferably a few hours, to enhance flavor and tenderness.

    Prepare the Breading Station: Setup three bowls: one with the seasoned flour (mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper), one with a beaten egg or more buttermilk if desired, and one with panko breadcrumbs.

      Dredge the Chicken: Remove the chicken from the buttermilk and let the excess drip off. First, coat the chicken in the seasoned flour, shaking off any excess. Then dip it into the egg/buttermilk mix, and finally coat it thoroughly with panko breadcrumbs, pressing lightly to adhere.

        Fry the Chicken: Heat about ½ inch of cooking oil in a large skillet over medium-high heat. Once the oil is hot (test by dropping a small piece of bread; it should sizzle), carefully add the chicken pieces. Fry for about 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove and place on a paper towel-lined plate to drain excess oil.

          Assemble the Wraps: Lay out a tortilla wrap and layer it with shredded lettuce, diced tomatoes, a sprinkle of shredded cheese, and a generous drizzle of ranch dressing. Slice the crispy chicken into strips and add on top.

            Roll the Wrap: Starting from one side, roll the wrap tightly while tucking in the ends to secure the filling. Repeat with the remaining tortillas and fillings.

              Serve: Slice the wraps in half diagonally and serve with additional ranch dressing or your favorite dipping sauce on the side.
