Crispy Chickpea & Feta Salad

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

4 cups fresh mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Juice of 1 lemon

1 tablespoon red wine vinegar

Instructions
 

Preheat your oven to 400°F (200°C).

    Spread the rinsed and drained chickpeas on a kitchen towel and pat them dry. This helps achieve maximum crispiness when roasting.

      In a mixing bowl, combine the chickpeas, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss until the chickpeas are evenly coated.

        Spread the seasoned chickpeas on a baking sheet in a single layer. Roast in the oven for 25-30 minutes, shaking the pan halfway through, until they are golden brown and crispy.

          While the chickpeas are roasting, prepare the salad base. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.

            Once the chickpeas are done, allow them to cool slightly before adding them to the salad.

              In a small bowl, whisk together the lemon juice, red wine vinegar, and a pinch of salt and pepper. Drizzle this dressing over the salad and toss gently to combine all ingredients.

                Finish with a sprinkle of fresh parsley and serve immediately for optimal crunchiness!
