Ingredients

2 pounds chicken wings

2 tablespoons olive oil

1 tablespoon baking powder (aluminum-free)

1 tablespoon smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken Wings: Preheat your oven to 425°F (220°C). Rinse the chicken wings under cold water and pat them dry with paper towels. Ensuring they're dry will help achieve maximum crispiness.

Create the Dry Rub: In a large mixing bowl, combine baking powder, smoked paprika, garlic powder, onion powder, cayenne pepper, oregano, thyme, salt, and black pepper. Mix well until all ingredients are evenly combined.

Coat the Chicken Wings: Add the chicken wings to the bowl and drizzle with olive oil. Toss the wings until they are well coated in the oil and then sprinkle the dry rub mixture over the wings. Toss again until the wings are uniformly coated with the rub.

Arrange for Baking: Line a baking sheet with aluminum foil and place a wire rack on top. This setup allows air to circulate around the wings, enhancing their crispy texture. Place the seasoned wings on the rack in a single layer, making sure not to overlap them.

Bake the Wings: Bake in the preheated oven for about 40-45 minutes, flipping the wings halfway through to ensure even crispiness. Keep an eye on them during the last few minutes to avoid burning.

Crisp Up Under the Broiler (optional): For extra crispiness, switch on the broiler for the last 2-3 minutes of cooking. Watch closely as wings can brown quickly.

Serve and Enjoy: Once crispy and golden, remove the wings from the oven. Let them rest for a couple of minutes before garnishing with chopped parsley. Serve hot with your favorite dipping sauces like ranch or blue cheese.
