Crispy Honey Garlic Tofu Nuggets

14 oz (400 g) firm tofu, pressed and drained

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/2 cup unsweetened plant-based milk (almond, soy, or oat)

2 tablespoons soy sauce

1 tablespoon cornstarch

1/4 cup honey or maple syrup (for a vegan option)

2 tablespoons rice vinegar

2 tablespoons sesame oil

Freshly chopped green onions and sesame seeds for garnish

Prepare the Tofu: Cut the pressed tofu into nugget-sized cubes (about 1-inch). Pat dry with paper towels to remove excess moisture.

    Set Up Breading Station: In a shallow bowl, combine flour, garlic powder, onion powder, salt, black pepper, and smoked paprika. In another bowl, whisk together the plant-based milk and soy sauce. In a third bowl, place the panko breadcrumbs.

      Bread the Tofu Nuggets:

        - Dip each tofu piece into the flour mixture, coating it thoroughly. Shake off any excess.

          - Next, dip the floured tofu into the plant-based milk mixture, allowing the excess to drip off.

            - Finally, coat the tofu in panko breadcrumbs, pressing gently to ensure an even layer. Place the breaded nuggets on a parchment-lined baking sheet.

              Bake the Nuggets: Preheat your oven to 425°F (220°C). Spray the breadcrumbs lightly with cooking spray for extra crispiness. Bake for 25-30 minutes or until the nuggets are golden-brown and crispy, flipping halfway through.

                Make the Honey Garlic Sauce: While the nuggets are baking, in a small saucepan over medium heat, combine the honey (or maple syrup), rice vinegar, sesame oil, and cornstarch mixed with a tablespoon of water. Stir continuously until the sauce thickens, about 3-5 minutes.

                  Coat the Nuggets: Once the nuggets are done, remove them from the oven. Drizzle the honey garlic sauce over the nuggets, or toss them in a bowl with the sauce to fully coat.

                    Garnish and Serve: Transfer the nuggets to a serving platter, and garnish with freshly chopped green onions and sesame seeds. Serve hot with your favorite dipping sauce, like sweet chili sauce or soy sauce.
