Crispy Jalapeño Cheddar Bites

1 cup shredded sharp cheddar cheese

½ cup cream cheese, softened

1 cup all-purpose flour

1 cup breadcrumbs (preferably panko for extra crunch)

1 large egg

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

Prep the Jalapeños: Begin by finely chopping the seeded jalapeños. If you prefer less heat, make sure to remove all the seeds and membranes. Set aside.

    Cheese Mixture: In a medium bowl, combine the softened cream cheese, sharp cheddar cheese, chopped jalapeños, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are thoroughly combined.

      Form the Bites: Using a tablespoon, scoop a portion of the cheese mixture and form it into small balls or patties, about 1 inch in diameter. Place them on a parchment-lined baking sheet.

        Dredge the Bites: Set up a dredging station with three shallow bowls: one with flour, one with the beaten egg, and one with breadcrumbs. First, roll each bite in the flour until lightly coated, then dip it in the egg, allowing any excess to drip off. Finally, coat it well with breadcrumbs. Repeat until all bites are coated.
