4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

2 tablespoons Dijon mustard

¼ cup all-purpose flour

3 tablespoons olive oil

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to an even thickness of about ½ inch. This will help with even cooking and tenderness.

      Set Up the Breading Stations:

        - In a shallow bowl, combine grated Parmesan cheese, panko breadcrumbs, garlic powder, dried oregano, paprika, salt, and black pepper.

          - In another shallow bowl, whisk together the eggs and Dijon mustard until well combined.

            - In a third shallow dish, place the all-purpose flour.

              Bread the Chicken:

                - Dredge each chicken breast in the flour, shaking off any excess.

                  - Dip the floured chicken into the egg mixture, allowing the excess to drip off.

                    - Finally, press the chicken firmly into the Parmesan breadcrumb mixture, ensuring an even coating on all sides.

                      Cook the Chicken: In a large, oven-proof skillet, heat the olive oil over medium-high heat. Once hot, add the coated chicken breasts to the skillet. Sear each side for about 3-4 minutes or until golden brown.

                        Finish in the Oven: Once seared, transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is fully cooked through and registers an internal temperature of 165°F (75°C).

                          Rest and Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes before slicing. Serve hot with your favorite side dishes or a fresh salad.
