Crispy Parmesan Crusted Zucchini

2 medium zucchini, sliced into ¼-inch thick rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

¼ teaspoon black pepper

2 large eggs

½ cup all-purpose flour

Cooking spray or olive oil for drizzling

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Breading Station: Set up a breading station with three shallow bowls:

      - In the first bowl, place the flour.

        - In the second bowl, beat the eggs until well combined.

          - In the third bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, and black pepper.

            Coat the Zucchini: Dip each zucchini round first in the flour, making sure to coat it completely. Shake off any excess flour. Next, dip it in the beaten eggs, allowing the excess to drip off. Finally, transfer it to the Parmesan breadcrumb mixture and coat thoroughly, pressing lightly to ensure it sticks.

              Arrange on Baking Sheet: Place the coated zucchini rounds in a single layer on the prepared baking sheet. Make sure they are not touching to ensure they get crispy. If desired, lightly spray or drizzle the tops with olive oil for extra crispiness.

                Bake: Bake the zucchini in the preheated oven for 20-25 minutes, flipping halfway through, until the zucchini is golden brown and crispy.

                  Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley, and serve with lemon wedges on the side for an extra burst of flavor.
