2 medium zucchinis

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 large eggs

Cooking spray or olive oil for drizzling

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Zucchini: Wash and dry the zucchinis, then slice them into 1/4-inch thick rounds. You can use a mandoline for even slices if desired.

      Set Up the Breading Station: In one shallow bowl, beat the eggs. In another shallow bowl, mix together the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.

        Bread the Zucchini: Dip each zucchini slice first into the beaten eggs, making sure to coat it well, and then press it into the breadcrumb mixture, ensuring it is fully coated.

          Arrange on Baking Sheet: Place the breaded zucchini chips on the lined baking sheet in a single layer. If you have leftover breadcrumb mixture, sprinkle it over the top of the chips for extra flavor.

            Bake Until Crispy: Lightly spray the top of the zucchini slices with cooking spray or drizzle a little olive oil on them. Bake in the preheated oven for 20-25 minutes, or until the chips are golden brown and crispy. Flip the chips halfway through to ensure even crispness.
