2 pounds beef chuck roast, cut into 1-inch cubes

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups beef broth

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon black pepper

1 teaspoon salt (adjust to taste)

3 cups egg noodles

2 cups frozen mixed vegetables (carrots, peas, and corn)

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the cubed beef and sear until browned on all sides, about 5-7 minutes. This step builds flavor, so don't skip it!

    Sauté the Aromatics: Remove the beef and transfer it to the crockpot. In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent, approximately 3-4 minutes.

      Combine and Season: Pour the sautéed onions and garlic into the crockpot with the beef. Add the beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, black pepper, and salt. Stir well to combine.

        Cook Low and Slow: Cover and cook on low heat for 6-8 hours or on high for 4 hours. The beef should become tender and easily shred with a fork.

          Add Noodles and Veggies: About 30 minutes before serving, stir in the egg noodles and frozen mixed vegetables. Cover and continue cooking until the noodles are al dente and the vegetables are heated through.
