4 cups green cabbage, shredded

2 cups purple cabbage, shredded

2 cups carrots, grated or julienned

1 red bell pepper, thinly sliced

1 cup sugar snap peas, trimmed and cut in half

1/2 cup green onions, chopped

1/2 cup fresh cilantro, chopped

1/2 cup unsalted roasted peanuts, roughly chopped

1/4 cup sesame seeds (optional)

For the Dressing:

1/4 cup soy sauce (or tamari for gluten-free)

3 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

1 teaspoon garlic, minced

1 tablespoon sriracha (adjust for spice level)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, purple cabbage, carrots, red bell pepper, sugar snap peas, green onions, and cilantro.

    Make the Dressing: In a small bowl or jar, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, and sriracha until well combined. Adjust the sweetness and spiciness according to your taste.

      Combine: Pour the dressing over the mixed vegetables and toss thoroughly until everything is evenly coated.

        Add Peanuts & Sesame Seeds: Just before serving, fold in the chopped peanuts and sesame seeds for an extra crunch. This will help maintain their texture.
