Crunchy Baked Falafel Balls

Ingredients
  

1 cup dried chickpeas (soaked overnight)

1/2 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 small onion, roughly chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons tahini

1 tablespoon lemon juice

1/4 cup breadcrumbs (for extra crunch)

2-3 tablespoons olive oil

Instructions
 

Soak the Chickpeas: Rinse the dried chickpeas and soak them in water overnight. They should double in size.

    Prepare the Mixture: Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking soda, salt, and black pepper. Pulse until the mixture is coarse but well-combined, ensuring not to over-process it into a paste.

      Mix in the Wet Ingredients: Transfer the chickpea mixture to a bowl. Stir in the tahini and lemon juice until fully incorporated.

        Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This helps the falafel bind together better.

          Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

            Form the Falafel Balls: Once the mixture has chilled, use your hands to form small balls (about 1.5 inches in diameter). Gently roll each ball in the breadcrumbs to give it an extra crunch.

              Arrange on Baking Sheet: Place the falafel balls on the prepared baking sheet, allowing some space between each ball.

                Drizzle with Olive Oil: Lightly drizzle olive oil over the falafel balls to help them crisp up in the oven.

                  Bake: Bake the falafel balls in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, flipping them halfway through for even cooking.

                    Serve and Enjoy: Remove from the oven and let them cool for a few minutes. Serve warm with pita bread, fresh veggies, and your favorite dipping sauce, such as tahini or tzatziki.
