Crunchy BBQ Cauliflower Wraps

1 medium head of cauliflower, cut into florets

1 cup breadcrumbs (panko for extra crunch)

1/2 cup all-purpose flour

1/2 cup plant-based milk (unsweetened)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

1 cup BBQ sauce (preferably homemade or your favorite brand)

4 large collard green leaves or whole wheat wraps

1/2 cup shredded carrots

1/2 avocado, sliced

Fresh cilantro for garnish

1 tablespoon olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Gradually whisk in the plant-based milk until smooth.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Then, roll it in the breadcrumbs until completely coated. Place them on the prepared baking sheet in a single layer, ensuring they do not touch each other.

        Bake the Cauliflower: Drizzle the florets with olive oil for added crispiness, then bake in the preheated oven for about 25-30 minutes, or until golden brown and crunchy, flipping halfway through.

          Glaze with BBQ Sauce: Once the cauliflower is baked, remove it from the oven and drizzle the BBQ sauce liberally over the hot florets. Toss to coat evenly and return to the oven for an additional 5 minutes to caramelize the sauce.

            Prepare the Wrap: While the cauliflower finishes, prepare your wrap. If using collard greens, gently blanch them in boiling water for 30 seconds to make them more pliable. Pat dry.

              Assemble the Wrap: Lay a collard green leaf or whole wheat wrap flat. Layer with a generous amount of the BBQ cauliflower, followed by shredded carrots, avocado slices, and a sprinkle of fresh cilantro.

                Wrap it Up: Fold the sides in and then roll from the bottom up to secure all the fillings. If using collard greens, you can tie them with a string or simply nestle the contents tightly.

                  Serve: Slice the wraps in half and serve immediately. You can pair them with extra BBQ sauce on the side for dipping or a fresh side salad for a complete meal.
