2 cups pecan halves

1 cup rolled oats

½ cup unsweetened shredded coconut

½ cup maple syrup

¼ cup coconut oil, melted

1 teaspoon vanilla extract

½ teaspoon sea salt

½ teaspoon ground cinnamon

½ cup mini chocolate chips (optional)

Instructions
 

Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Ingredients: In a large bowl, combine the pecan halves, rolled oats, and shredded coconut.

      Create Wet Mixture: In a separate bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, sea salt, and ground cinnamon until well combined.

        Combine: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.

          Shape Clusters: Using your hands or a spoon, scoop out small handfuls of the mixture and form clusters. Place them onto the prepared baking sheet, ensuring they are spaced apart.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the mixture is fragrant. Keep an eye on them to avoid burning.

              Add Chocolate (Optional): If using chocolate chips, remove the clusters from the oven and sprinkle the chocolate chips on top while they’re still warm. Allow the residual heat to melt the chocolate a bit and then gently swirl it into the clusters.
