Crunchy Ramen Noodle Chicken Salad

2 packs of ramen noodles (discard flavor packets)

2 cups cooked shredded chicken (rotisserie chicken works great)

1 cup green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup matchstick carrots

1/2 cup sliced green onions

1/2 cup slivered almonds (toasted, if desired)

1/4 cup sesame seeds (toasted, if desired)

Fresh cilantro leaves for garnish (optional)

For the Dressing:

1/3 cup vegetable oil

1/4 cup rice vinegar

2 tablespoons soy sauce

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and pepper to taste

Instructions
 

Prepare the Ramen Noodles: In a pot of boiling water, cook the ramen noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Dressing: In a small bowl, whisk together the vegetable oil, rice vinegar, soy sauce, honey (or maple syrup), sesame oil, garlic powder, ground ginger, and a pinch of salt and pepper until well combined. Taste and adjust seasoning if necessary.

      Mix the Salad: In a large mixing bowl, combine the cooked and cooled ramen noodles, shredded chicken, green cabbage, red cabbage, matchstick carrots, green onions, toasted almonds, and sesame seeds.

        Combine Everything: Pour the dressing over the salad mixture and gently toss until all the ingredients are well coated.
