Ingredients

2 medium cucumbers, sliced thin

1 large ripe mango, diced

1 red bell pepper, finely chopped

1/4 red onion, thinly sliced

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon olive oil

1 tablespoon honey or agave syrup

Salt and pepper to taste

Optional garnish: toasted sesame seeds or crushed peanuts

Instructions

Prepare the Vegetables: Begin by slicing the cucumbers into thin rounds. If you prefer, you can deseed the cucumbers for a crunchier texture. Place the sliced cucumbers in a large mixing bowl.

Dice the Mango: Peel the mango and remove the pit. Cut the flesh into small cubes and add them to the bowl with the cucumbers.

Chop Additional Ingredients: Add the finely chopped red bell pepper, sliced red onion, and minced jalapeño to the bowl for added color and flavor.

Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, and honey (or agave syrup). Season with salt and pepper to taste. This dressing will elevate the freshness of the salad.

Combine and Toss: Pour the dressing over the cucumber and mango mixture. Add the chopped cilantro. Gently toss everything together until well combined, being careful not to mash the mango.

Taste and Adjust: Taste the salad and adjust the seasoning as needed, adding more lime juice, salt, or pepper to your preference.

Chill: For the best flavor, let the salad sit in the refrigerator for about 15-30 minutes before serving to allow the flavors to meld together.

Garnish and Serve: When ready to serve, sprinkle with toasted sesame seeds or crushed peanuts for an additional crunch. Enjoy this refreshing salad as a side dish or a light main!
